Egg Salad

A lunchtime favorite of mine, I rarely ate it when I was counting points plus because I was stingy with how I spent my points.  This is one of the reasons I love Simply Filling.  I think I "spend" my daily nutrition intake in smarter, healthier ways.  I drink more milk, eat more lean protein, consume more whole grains.

Back to the egg salad.  This is one of my favorite go-tos for lunch or an easy dinner.  I try to keep hard boiled eggs on hand.  Sometimes I will buy a bag of them at Trader Joes because I hate the cooking, waiting, peeling process.  But more typically, I make a large batch and refrigerate the rest for use across the next couple of days.
  • 2 hard boiled eggs
  • Fat free Greek yogurt
  • Old-Bay (optional, or add whatever other seasoning salt you like)
  • Sandwich bread, my favorite are Arnold's Pocket Thins

I feel ridiculous writing this up like it's a recipe because it is so darn easy.  But that's what we're trying to do here.  Share the simplicity of Simply Filling.  So here it goes:
  1. Hard boil and peel eggs
  2. Rough chop two eggs
  3. Add fat free Greek yogurt until salad is  the consistency you like
  4. (Optional) Season with Old Bay or another seasoning salt
  5. Make, and enjoy, a sandwich!

Weekend Breakfast Staple

Egg Sandwich
  • Fiber One English Muffin (I used whole wheat but any of the Fiber One brand muffins are Simply Filling)
  • One egg
  • One fat free Kraft single
My husband takes our son to Tae Kwon Do every Saturday morning and stops at Dunkin Donuts afterwards, bringing breakfast home for the family.  My favorite DD pick is sausage, egg, cheese on a bagel.  But at 16 WWPP, that's a big chunk of my allowable points at the start of the day.

In the past, I've passed on DD altogether and then watched with envy as my husband and kids enjoyed our Saturday morning ritual.  The SF solution was an easy one to come up with.

1.) Cook one egg using an egg ring like this one
2.) Toast English muffin
3.) Combine with FF cheese slice to make a SF breakfast sandwich
We are not dietitians or employees of Weight Watchers.  But we credit WW for helping us lose weight and keep it off.  Specifically, we choose to follow the Simply Filling plan the majority of the time.

There is plenty of information on Weight Watchers website about SF. But some of the information is conflicting and when we each started on SF, we were frustrated by the lack of resources. So we started this as a way to share our SIMPLE food choices on Simply Filling.
